Tofu Fruit Skewers In Lemon Ginger Marinade

This fruity tofu dish is perfect for your barbecue. The spicy ginger-lemon marinade and grilled mango and pineapple pieces are guaranteed to delight your tastebuds! The recipe comes from the book Vegan Grillen by Kristina Unterweger.


For the ginger-lemon marinade
  • 1 tablespoon ginger chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons white wine
  • 1 teaspoon cane sugar
  • 1 tbsp sunflower oil
For the tofu fruit skewers
  • 300 g tofu
  • 160 g pineapple
  • 160 g mango
  • 4 skewers
  • 1 ½ tsp salt
  • 2 tablespoons olive oil
  • 3 tablespoons flaxseed coarsely ground
  • 1 teaspoon cumin
  • 1 tsp fennel
  • 1 teaspoon anise
  • 250 ml rice milk
  • 100 ml rice cream


  • For the ginger-lemon marinade mix all the ingredients well together.

  • Rinse tofu with cold water, pat dry with kitchen paper and divide into 12 equal pieces. Let the tofu pieces soak in marinade for 4 hours.

  • Peel pineapple and mango and cut into pieces about 40g each.

  • Take tofu from the marinade, pat dry and place on wooden skewers, alternating with the fruit pieces. Coat skewers with remaining marinade, then place on the hot grill and turn on each side until the tofu turns golden brown.
