Spooky cupcakes: Cocoa-Gingerbread-Graveyards

The weathered gravestones are made out of gingerbread, the fluffy graveyard goofer dust out of cocoa and rich chocolate cream. And if you dig a little deeper, you will find moist soil which turns this creepy graveyard into a super tasty luscious chocolate cupcake. Ingredients

Gingerbread gravestones
  • 225 g wholemeal spelt flour
  • 60 g Margarine melted
  • 130 g Organic Veganz Agave Syrup
  • 100 ml oat milk
  • 3 tsp. cocoa important to make gravestones look like dark weathered stones
  • 1 tsp. soy flour a replacement for eggs
  • ½ tsp. baking soda
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 2 knife tips cardamom
  • 2 knife tips cloves grounded
  • 2 knife tips salt
  • 2 knife tips vanilla grounded
Cupcake dough
  • 120 g sifted flour
  • 180 ml oat milk
  • 120 g Organic Veganz Agave Syrup
  • 60 g Margarine melted
  • 1 tsp. soy flour replacement for eggs
  • 6 tsp. baking cocoa
  • ½ tsp. grounded vanilla
  • ¼ tsp. baking soda
  • 2 knife tips salt
Graveyard goofer dust
  • 100 g Margarine
  • 3  tsp. cocoa
  • 2  tsp. sugar or other sweeteners
  • 2 tbsp. oat milk
  • 6 tbsp. cocoa to sprinkle on top
What else do you need?
  • muffin baking tray
  • paper cups
  • card board
  • scissors
  • tooth pick

Instructions

Gingerbread gravestones
  • Mix all ingredients for the gingerbread with a blender.

  • Wrap the dough in clear foil and let it cool in the fridge.

  • Flour the countertop and roll out the dough 7mm thick. Hint: try not to roll the dough out as flat as you normally would do. A few cracks make the gravestones look more weathered. If you flour the cut out cookies unevenly, the effect will be increased.

  • If you don't have a gravestone shaped cookie cutter, you need to be creative: Cut two (or more) gravestone shaped card boards, place it on the dough and cut it along the outline. Make about 12 gingerbread gravestones or more in case some break apart.

  • Afterwards you can engrave the gravestones with a toothpick (e.g. RIP-Rest In Peace or DBC-Death By Chocolate).?

  • Place the raw gingerbread gravestones on a baking tray with baking paper and bake them for approx. 7 min at 180°C or 160°C (fan oven) in a preheated oven.

  • Take cookies out of the oven and let them cool down.

Graveyard goofer dust cupcakes
  • Beat margarine and sugar (or agave syrup) for a few minutes until creamy.

  • In a second bowl, mix together soy flour, vanilla, flour, cocoa powder, baking soda and salt.

  • Then put both contents together, add oat milk and mix everything with a hand mixer until you get a uniform dough.

  • Distribute paper cups on the muffin baking tray and evenly divide the dough on the cups.

  • Preheat oven. Bake cupcakes for approx. 12 min at 180°C or 160°C (fan oven).

  • When baked, take the graveyard cupcakes out of the oven and let them cool down.

Graveyard goofer dust topping
  • Mix all ingredients (except baking cocoa for topping) until you get a creamy paste.

Assemble the cupcakes
  • Distribute the topping on the cupcakes

  • Sprinkle the leftover baking cocoa powder with a spoon over the topping for the perfect graveyard goofer dust look.

  • Stick the tooth picks in the gingerbread gravestones and place them on the cupcakes. The tooth picks provide good stability but make sure to take the gravestones out before biting into your cupcake.? Well done! Now you can admire your own little spooky Cocoa-Gingerbread-Graveyard. :) Enjoy!
