Scrambled Tofu De Luxe

Vegan scrambled eggs made out of tofu is a must on every breakfast table. In Patrick Bolks book  So geht vegan! we have discovered this wonderful recipe for a good start in the morning.

  • 1 onion
  • 400 g tofu
  • 200 g tofu smoked
  • 3 potatoes small
  • ½ spring onion
  • 1 bell pepper
  • ½ spring onion
  • 3 gherkins
  • 2 tbsp. oil
  • 172 tsp. grounded tumeric
  • 100 ml soy drink or soy cream
  • salt
  • pepper from the mill
  • 1 tsp. Kala Namak optional


  • Peel onions and chop finely. In a bowl, crumble tofu with hands or a fork and cut the smoked tofu in small cubes. Then peel the potatoes (organic potatoes just need to be washed) and cut into small cubes as well. Take the seeds out of the bell pepper and chop finely.

  • Wash the spring onion and cut it into rings, cut the gherkins into slices.

  • Fry onions in hot oil, then add tofu and tumeric and stirr well. Now put in the smoked tofu, potatoes, bell pepper and spring onions and cook all together for 2 to 3 minutes while stirring.

  • Pour in soy drink or cream, stirr again and let simmer for 5 to 10 minutes. When done, add the gherkins and season to taste with salt and pepper.

  • Optionally, add some Kala Namak for the typical egg flavour.
