Red Ravioli with Lupin Stuffing

Never eat ravioli from the can again! The red ravioli with lupin stuffing from Alberts are not only an eye-catcher, they also taste delicious. The juicy lupin-cocktail-sausages makes this dish even tastier. Although the filling includes a meat replacement, it doesn't include any soy products.

  • 100 g alberts lupin-cocktail-sausages
  • 1 onion small chopped
  • 300 g flour
  • 150 ml red beet juice
  • ½ tsp. salt
  • 2 tbsp. soy sauce
  • oil for frying

  • Knead the flour, red beet juice and salt to a smooth dough. Cut the sausages in small slices and fry together with onions in hot oil. Stirr in the soy sauce and mix everything together.

  • Roll out the pasta dough very thin and cut out circles. Put the filling in the middle of a circle and cover it with another circle. Repeat and cook the raviolis in boiling water for about 4 minutes.

  • We recommend to serve this dish with a vegan cheese-cream sauce or carbonara sauce.
