Honeydew Lime Mint Ice Cream

Melon ice cream is always a big hit in the summer. The preparation is a little labor intensive but at Veganz you can find all the necessary ingredients. For us, this ice cream is a "must" in the summer! The recipe comes from the book Veganista by Celilia Havmöller & Susanna Paller.


  • 450 g honeydew melon about 1 piece
  • 30 g lime juice freshly squeezed
  • 20 g water
  • 130 g sugar
  • 1 g mint
  • ½ g locust bean gum
  • ½ g guar gum


  • Remove fresh mint from the stems, weigh and wash, then put aside.

  • Slice honeydew melon in half and remove the seeds with a spoon. Now cut each half into three columns and cut the flesh from the shell. Cut the melon into smaller pieces, weigh and put in a bowl aside.

  • Squeeze juice from 1 lime. In a large measuring cup or a jug, weigh and mix water and lime juice. Puree the mint and melon pieces with a hand blender.

  • Weigh and mix the sugar, locust bean gum and guar gum in a bowl.

  • Now you can begin to gradually mix the dry and liquid ingredients with a hand blender. When the sugar has completely dissolved, the mixture is ready and then goes directly into the ice cream machine.

  • Once the ice machine stops, either enjoy the ice immediately or let sit for about 3 hours in the freezer.
