Honeydew Lime Mint Ice Cream
- 450112.5450 g honeydew melon about 1 piece
- 307.530 g lime juice freshly squeezed
- 20520 g water
- 13032.5130 g sugar
- 10.251 g mint
- ½0.125 ½ g locust bean gum
- ½0.125 ½ g guar gum
Remove fresh mint from the stems, weigh and wash, then put aside.
Slice honeydew melon in half and remove the seeds with a spoon. Now cut each half into three columns and cut the flesh from the shell. Cut the melon into smaller pieces, weigh and put in a bowl aside.
Squeeze juice from 1 lime. In a large measuring cup or a jug, weigh and mix water and lime juice. Puree the mint and melon pieces with a hand blender.
Weigh and mix the sugar, locust bean gum and guar gum in a bowl.
Now you can begin to gradually mix the dry and liquid ingredients with a hand blender. When the sugar has completely dissolved, the mixture is ready and then goes directly into the ice cream machine.
Once the ice machine stops, either enjoy the ice immediately or let sit for about 3 hours in the freezer.
