Green Salad with Sweet Almond Dressing

Fresh, light and healthy salad with a flavoursome dressing! Almond butter, refined with fruity orange juice and spicy mustard spoils your taste buds and is easily made. This recipe is from the producer DeSmaakt.

Ingredients

For the almond dressing
  • 60 g almond butter
  • 60 ml olive oil
  • 1 small shallot
  • 1 tsp. dijon mustard
  • 240 ml orange juice freshly squeezed
  • 1 tsp. orange peel
  • 3 tsp. Organic Veganz Agave Syrup
  • 1 pinch salt
  • 1 pinch pepper freshly grounded
For the salad
  • 300 g salad mixed, (spinach, frisee, radicchio, lamb's lettuce, lettuce, chard)
  • handful edamame
  • 3 asparagus stalks peeled
  • 150 g green grapes
  • 2 tsp. sunflower seeds
  • 1 bunch chives finely chopped

Instructions

For the almond dressing
  • With a fork, mix all ingredients together in a bowl until creamy in texture.

For the salad
  • Mix the salad and the edamame in a bowl. Add asparagus, grapes (whole ones or cut in half) and the chives.

  • Sprinkle with almond dressing and serve.
