Farmer’s Breakfast

Hearty and SUPER good - that's what you can say about this Farmer's Breakfast by Nicole Just. You can find this classic in her book La Veganista - Lust auf die vegane Küchee along with plenty of other tasty dishes that will get even non-vegans excited!

  • 400 g potatoes mostly waxy
  • Salt
  • 1 onion
  • 4 tbsp flour
  • ½ tsp baking powder
  • 2 tbsp nutritional yeast
  • ½ tsp Kala Namak
  •  tsp turmeric powder
  • 200 ml soy milk
  • 5 tbsp vegetable oil neutral
  • black pepper from the mill
In Addition
  • ½ bunch chives
  • 2 pickles


  • Peel the potatoes, cut into 1 cm cubes and boil in salted water for 5 minutes. Drain in a colander drain and cool briefly. Peel the onion and cut into small cubes.

  • In a bowl, mix the flour with the baking powder, nutritional yeast, Kala Namak, turmeric and soy milk mix thoroughly.

  • Fry the potatoes in a large pan in 3 tablespoons of oil until golden brown over medium heat for 10-12 minutes.. Add the onions and fry for 1 more minute. Season with salt and pepper.

  • Meanwhile, in a small pan (18 cm diameter) heat 1 tablespoon of oil and pour half of the mixture. Fry the "omelette" for 3-5 min on medium heat until golden brown on both sides and place on a plate.

  • Now fry the rest of the mixture in the remaining oil and make a second omelette. Spread half of the potato mixture on half of each "omelette."

  • Wash the chives, shake dry and cut into thin rings. Garnish the farmer's breakfast with 1 pickle and serve sprinkled with chives.
