Coconut Banana Bread

Hmmmm… this incredible scent! It is time for banana bread! We love it sweet, with a light coconut flavor! The special aroma comes from coconut milk, our Bio Veganz Chocolate Coconut Cream and our Bio Veganz Coconut Oil. Yum, yum! Enjoy this flavorful banana bread right out off the oven, have it for breakfast or with a cup of tea in the afternoon! You decide!

Ingredients

  • 3 bananas ripe
  • 150 g Bio Veganz Chocolate Cocnut Cream
  • 2 ½ tbsp Bio Veganz Coconut Oil
  • ¼ cup brown sugar
  • ¾ cup coconut milk
  • 1 cup oats
  • 2 cups spelt flour
  • ½ cup cocoa powder
  • ¼ cup Bio Veganz Cocoa Nibs
  • 1 pinch salt
  • 3 ½ tsp backing powder

Instructions

  • Preheat the oven to 180 Degrees Celsius. Give parchment paper into a cake form.

  • Use a fork to mash the three bananas in a big bowl, then add backing powder, salt, oil, sugar and chocolate coconut cream and mix well.

  • Add cocoa, flour and oats and blend well with a hand mixer on full power until you have a smooth batter.

  • Add the cocoa nibs last. Then pour the dough into the cake form and bake for 60 minutes.

    This coconut banana bread recipe sounds delicious.
    My daughter went to Germany over a year ago & brought me back some Veganz chocolate coconut balls.
