Baked Grilled Apple With Pomegranate Stuffing

So you just finished grilling, the coal is still hot, and you're in the mood for a dessert? Then try this amazing recipe for grilled baked apples with pomegranate stuffing! The recipe comes from the book Vegan Grillen by Kristina Unterweger.


  • 4 apples
  • 1 pomegranate
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 vanilla pod
  • 1 tsp Organic Veganz Agave Syrup
  • 40 g cookies
  • 20 g hazelnut chopped
  • some Margarine
  • 2 tablespoons cane sugar raw
  • 4 pieces aluminum foil


  • Cut the pomegranate in half, remove seeds carefully. Combine lemon zest, crushed cookies, scraped vanilla, agave syrup and lemon juice together. Mix the pomegranate seeds with the hazelnuts.

  • Cut a lid out of each apple. Core and hollow out the apples, leaving an approximately 1 cm thick margin. Finely dice the inner fruit pulp of one apple and add to your mix. Season your mix to taste and fill the apples with it.

  • Coat apples with margarine, sprinkle with sugar and wrap in foil.

  • Barbecue on an open grill , repeatedly turning.
